  • 4 cups all-purpose flour
  • 2 1/4 teaspoons instant yeast
  • 1 1/2 teaspoons salt
  • 1 tablespoon sugar
  • 1 1/2 cups warm water (110°F)
  • 1/4 cup baking soda
  • 1/4 cup unsalted butter (melted)
  • 1 tablespoon fresh rosemary (chopped)
  • 1/2 cup grated Parmesan cheese
  • 8 ounces mozzarella cheese (cut into cubes)
  • Coarse sea salt (for sprinkling)

Instructions

  1. In a mixing bowl, combine warm water, yeast, and sugar. Let stand for about 5 minutes until foamy.
  2. In another bowl, whisk together flour and salt. Gradually add to the yeast mixture and stir until combined.
  3. Knead the dough for about 5 minutes using a stand mixer or by hand for about 8 minutes.
  4. Mix in chopped rosemary and grated Parmesan. Shape into a ball and let rise in a greased bowl for about an hour until doubled.
  5. Preheat oven to 425°F and line a baking sheet with parchment paper.
  6. Punch down the dough, divide into eight pieces, flatten each piece, place a mozzarella cube in the center, seal it around the cheese.
  7. Roll each piece into a rope and shape it into pretzel forms.
  8. Boil water with baking soda, then boil each pretzel for about 30 seconds before transferring them to paper towels to drain.
  9. Brush with melted butter and sprinkle coarse sea salt before baking for 12–15 minutes until golden brown.
