Ingredients
- 4 cups all-purpose flour
- 2 1/4 teaspoons instant yeast
- 1 1/2 teaspoons salt

- 1 1/2 cups warm water (110°F)
- 1/4 cup baking soda
- 1/4 cup unsalted butter (melted)
- 1 tablespoon fresh rosemary (chopped)
- 1/2 cup grated Parmesan cheese
- 8 ounces mozzarella cheese (cut into cubes)
- Coarse sea salt (for sprinkling)
Instructions
- In a mixing bowl, combine warm water, yeast, and sugar. Let stand for about 5 minutes until foamy.
- In another bowl, whisk together flour and salt. Gradually add to the yeast mixture and stir until combined.
- Knead the dough for about 5 minutes using a stand mixer or by hand for about 8 minutes.
- Mix in chopped rosemary and grated Parmesan. Shape into a ball and let rise in a greased bowl for about an hour until doubled.
- Preheat oven to 425°F and line a baking sheet with parchment paper.
- Punch down the dough, divide into eight pieces, flatten each piece, place a mozzarella cube in the center, seal it around the cheese.
- Roll each piece into a rope and shape it into pretzel forms.
- Boil water with baking soda, then boil each pretzel for about 30 seconds before transferring them to paper towels to drain.
- Brush with melted butter and sprinkle coarse sea salt before baking for 12–15 minutes until golden brown.
