Ingredients

  • 4 skinless boneless chicken thighs
  • 200g fresh pineapple chunks
  • 1 small shallot
  • juice of 1 lime
  • 2 tbsp chipotle paste
  • 2 tbsp runny honey
  • 1 ripe avocado
  • small handful fresh coriander
  • 8 small corn or flour tortillas

Instructions

  1. Prepare the marinade by whisking together chipotle paste, honey, tomato puree, salt, and crushed garlic in a medium bowl. Cut chicken into bite-sized pieces and coat with marinade. Set aside.
  2. Preheat your oven to 200°C (400°F). Spread the marinated chicken and pineapple evenly on a baking tray. Roast for 30 minutes until cooked through.
  3. While the chicken is cooking, chop shallot and cube avocado. Warm tortillas in a hot pan if desired.
  4. Once cooked, squeeze lime juice over the chicken and pineapple mixture. Toss with shallots and serve in tortillas topped with avocado and fresh coriander.
