- 1 ½ lbs sirloin or ribeye steak, cut into bite-sized cubes
- 12 oz cheese tortellini (fresh or refrigerated)
- 6 tbsp unsalted butter
- 4 cloves garlic, minced
- ½ tsp smoked paprika
- 2 tbsp olive oil
- Juice of 1 lemon
- Fresh parsley and chives, chopped
Instructions
- Cook tortellini: Boil salted water and cook tortellini according to package instructions. Reserve ½ cup pasta water before draining.
- Sear steak: Season steak with Cajun seasoning and spices. In a skillet, heat olive oil over medium-high heat and sear steak bites until browned (about 2–3 minutes per side). Remove from skillet.
- Make sauce: In the same skillet, melt butter and sauté garlic until fragrant. Stir in lemon juice, red pepper flakes, and herbs.
- Combine: Add cooked tortellini and steak back into the skillet. Toss with sauce and reserved pasta water until creamy.
- Serve hot, garnished with extra herbs and Parmesan.
