  • 5 chicken thighs, skin on, bone in
  • 12 lemons (zest + juice)
  • 1 tbsp dried oregano
  • 4 garlic cloves, minced
  • 1 cup long grain rice
  • 1 ½ cups chicken broth
  • ¾ cup water
  • Salt and black pepper to taste

Instructions

  1. Marinate chicken in lemon zest, juice, oregano, garlic, salt, and olive oil for at least 20 minutes.
  2. Heat oil in a large pot over medium heat; sauté diced onion until translucent.
  3. Sear marinated chicken thighs skin-side down until golden brown on both sides.
