  • 1 large egg (room temperature)
  • Tangzhong (from recipe above)
  • 1 teaspoon vanilla paste or extract
  • 6 tablespoons unsalted butter (softened)
  • 2/3 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 cup all-purpose flour
  • 3 tablespoons unsalted butter (melted)
  • 4 tablespoons unsalted butter (room temperature)
  • 2 ounces cream cheese (room temperature)
  • 1 cup powdered sugar
  • 2 1/2 tablespoons heavy cream

Instructions

  1. Prepare peach filling by combining cubed peaches, sugar, lemon juice, cornstarch, and water. Set aside.
  2. Make the dough by mixing water, bread flour, sugar, yeast, salt, milk, heavy cream, egg, tangzhong, and vanilla until smooth.
  3. Knead the dough on a floured surface until elastic; let rise until doubled (90 minutes).
  4. Roll out the dough into a rectangle and fill it with sliced peaches and peach filling.
  5. Roll tightly into a log and cut into 12 equal pieces; place in a greased baking dish.
  6. Prepare crumb topping by mixing softened butter with brown sugar and flour; sprinkle over rolls.
  7. Bake at 350°F (175°C) for about 30 minutes or until golden brown.
