Ingredients
- 4 cod fillets (about 6 oz each)
- 1 cup fresh basil leaves
- ¼ cup grated Parmesan cheese (plus extra for topping)
- 2 cloves garlic, minced
- ½ cup extra-virgin olive oil
- 1 tablespoon lemon juice
- Salt and freshly ground black pepper
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a food processor, blend basil leaves, garlic, pine nuts (if using), and Parmesan until coarsely chopped. Slowly add olive oil while blending until smooth. Stir in lemon juice and season with salt and pepper.
