  • 1 large fresh pineapple
  • 4 kiwis
  • 810 fresh mint leaves
  • 2 limes
  • 2 tablespoons honey

Instructions

  1. Toast the coconut in a skillet over medium-low heat for about 3-5 minutes until lightly browned. Set aside.
  2. Cube the pineapple and add it to a large mixing bowl. Halve the kiwis, scoop out the flesh, slice into bite-sized pieces, and add them to the bowl.
  3. Thinly slice the mint leaves and mix them into the fruit.
  4. In another bowl, zest and juice the limes, whisk with honey, then pour over the fruit mixture and toss gently.
