  • ½ cup buttermilk
  • ½ cup hot water
  • 1 ½ cups heavy whipping cream
  • ½ cup powdered sugar
  • 2 cups shredded coconut (sweetened or unsweetened)
  • 2–3 drops pink food coloring
  • 1 tbsp milk (to moisten coconut if needed)

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a greased 9×13-inch baking pan.
  2. In one bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, cream butter and sugar until fluffy. Add eggs and vanilla; beat well.
  4. Alternate mixing in dry ingredients with buttermilk, followed by hot water until smooth.
  5. Pour batter into the prepared pan and bake for 25–30 minutes or until a toothpick comes out clean. Cool completely.
  6. For frosting, whip cream until peaks form, adding powdered sugar and vanilla until fluffy.
  7. Frost cooled cake and top with tinted shredded coconut.
  8. Chill for at least an hour before cutting into squares.
