  • 812 medium roasting potatoes
  • 200g crumbled feta cheese
  • 3 tablespoons small capers or sliced black olives
  • 2 large garlic cloves, sliced
  • 1 red onion, thinly sliced
  • Fresh rosemary sprigs
  • 1 lemon, cut into quarters
  • Olive oil for drizzling
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 200C (400F) and drizzle olive oil in a large skillet or roasting tray.
  2. Rinse the potatoes and pierce them with a knife.
  3. Microwave the potatoes covered for 7-12 minutes until tender.
  4. Smash the cooked potatoes in the skillet, keeping their shape intact.
  5. Drizzle with olive oil, season with salt and pepper, and add garlic and rosemary on top.
  6. Roast for about 10 minutes until golden brown.
  7. Add feta cheese, onion slices, and capers; return to the oven for another 5 minutes.
  8. Serve hot with freshly squeezed lemon juice.
