  • 3/4 cup fresh raspberries
  • 2 tablespoons granulated sugar (for syrup)
  • 1 tablespoon lemon juice
  • 6 tablespoons unsalted butter

Instructions

  1. Preheat oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. In a food processor, pulse almond meal and powdered sugar until fine; sift into a bowl.
  3. Beat egg whites until foamy; gradually add granulated sugar and beat until stiff peaks form.
  4. Gently fold dry ingredients into egg whites until the batter flows like lava.
  5. Pipe rounds onto prepared sheets; let rest for 30 minutes until dry to touch.
  6. Bake for about 15 minutes; cool completely before filling with raspberry buttercream made from pureed raspberries, sugar, and butter.
