  • 15 Oreo cookies
  • 3 tablespoons unsalted butter (melted)
  • 2 packages cream cheese (8 ounces each, softened)
  • 1/2 cup granulated sugar
  • 2 tablespoons sour cream
  • 2 tablespoons all-purpose flour
  • 2/3 cup white chocolate chips
  • 1 tablespoon coconut oil
  • 2 large eggs
  • 1 box Red Hot candies (5 ounces, crushed)
  • 2 cups Cool Whip

Instructions

  1. Preheat oven to 350°F and prepare muffin tins with cupcake liners.
  2. In a food processor, crush Oreo cookies; mix crumbs with melted butter. Press into the bottom of cupcake liners.
  3. Beat cream cheese and sugar until smooth; add sour cream and flour. Melt white chocolate with coconut oil and mix into cream cheese mixture.
  4. Add eggs one at a time, mixing well after each addition. Fold in crushed Red Hots.
  5. Fill prepared crusts with cheesecake batter and bake for about 25 minutes until set yet slightly jiggly in the center.
  6. Cool on a wire rack before refrigerating until chilled.
  7. For the topping, mix additional cream cheese with remaining crushed Red Hots and fold in Cool Whip; pipe onto cooled cheesecakes.
