  • 14.3 oz Oreo cookies
  • 2 tbsp unsalted butter
  • 8 oz low-fat cream cheese
  • 1 cup granulated sugar
  • 16 oz Lite Cool Whip (2 tubs)
  • 5.9 oz instant chocolate pudding mix
  • 3 cups milk
  • Red food coloring (optional)

Instructions

  1. Preheat the oven to 350°F and spray a 9×13-inch baking pan with nonstick spray.
  2. In a food processor, blend Oreos and melted butter until smooth. Press into the bottom of the prepared pan and bake for 5-8 minutes. Let cool.
  3. For the cheesecake layer, beat cream cheese, sugar, one tub of Cool Whip, and lemon juice until smooth.
  4. In another bowl, whisk together pudding mix and milk until thickened, then add cream cheese and red food coloring if desired.
  5. Layer the cheesecake mixture over the cooled crust, followed by the red velvet pudding layer. Top with remaining Cool Whip and sprinkle mini chocolate chips.
  6. Chill for at least one hour before serving.
