  • ½ cup ricotta cheese
  • 1 teaspoon vanilla extract
  • 2 tablespoons prepared strong coffee
  • 1 teaspoon rum (optional)

Instructions

  1. In a large bowl, combine flour, cocoa powder, baking powder, baking soda, cinnamon, sugar, and salt.
  2. In another bowl, whisk buttermilk, eggs, vanilla extract, vinegar, red food coloring, and melted butter until smooth.
  3. Gradually mix wet ingredients into dry ingredients until just combined; some lumps are fine.
  4. Preheat a non-stick skillet over medium heat. Grease lightly with butter or oil.
  5. Pour ¼ cup batter onto the skillet for each pancake. Cook until bubbles form (about 2-3 minutes), then flip and cook another 2-3 minutes until golden brown.
