Ingredients
- 6–8 ripe large peaches
- 1 ½ cups freshly squeezed lemon juice
- 1 ½ cups granulated sugar (split into two portions)
- 5 cups water (split into portions for puree, dilution, and syrup)
- Fresh mint sprigs (for garnish)
- Ice cubes
Instructions
- Wash, pit, and dice peaches. In a saucepan, combine diced peaches, sugar (½ cup), water (½ cup), and lemon juice (1 tablespoon). Simmer for 10-15 minutes until soft.
- Mash peaches thoroughly and strain through a fine-mesh sieve into a bowl to create puree. Let cool.
- In another saucepan, combine remaining sugar (1 cup) and water (1 cup) to create simple syrup; heat until dissolved and cool.
- Juice lemons to yield about 1 ½ cups lemon juice. Strain seeds/pulp.
- In a large pitcher, mix cooled simple syrup with strained lemon juice, then add peach puree.
- Gradually stir in cold water up to 6 cups total for desired taste. Chill for at least 30 minutes before serving over ice.
