Ingredients
- 1 lb refrigerated tortellini (any flavor)
- 8 oz mozzarella (cubed)
- 4 oz mini pepperoni
- 4 oz sliced black olives
- 1/2 pint cherry tomatoes (halved)
- 2 jarred roasted red peppers (diced)
- Salt and pepper to taste
- Fresh basil for garnish
- 3 tbsp roasted red pepper oil
- 1 tbsp extra virgin olive oil
- 2 tbsp balsamic vinegar
- 1 tbsp red wine vinegar
- 3 tbsp parmesan cheese
Instructions
- Boil water in a large pot and cook the tortellini until al dente. Drain and cool.
