  • 10 tbsp Unsalted Butter (melted)
  • 32 oz (1000g) Cream Cheese (well softened)
  • 3/4 cup White Sugar
  • 1/2 cup Liquid Honey
  • 1 tbsp Vanilla
  • 3/4 tsp Kosher Salt
  • 3 Large Eggs (at room temperature)
  • 2 Large Egg Yolks (at room temperature)
  • 3/4 cup Heavy Cream
  • 3/4 cup Sour Cream
  • 1 tbsp Cornstarch
  • 1/2 cup Full-Fat Sour Cream
  • 1/2 cup Liquid Honey
  • 1/41/2 tsp Table Salt (to desired saltiness)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix graham cracker crumbs, sugar, and melted butter; press into springform pan. Bake for 10 minutes and let cool.
  3. Beat cream cheese and sugar until smooth. Add honey, vanilla, and salt; mix well. Incorporate eggs one by one.
  4. Fold in heavy cream, sour cream, cornstarch, and additional honey. Pour over crust.
  5. Bake for 90 minutes until slightly jiggly in center; cool gradually in the oven for 1 hour.
  6. Refrigerate for at least 4 hours before serving.
