  • 23 garlic cloves (minced)
  • 1 can (8 oz) tomato puree
  • 1 can (14 oz) crushed tomatoes
  • 13 cups chicken broth (to desired consistency)
  • 1 teaspoon dried basil
  • 1 cup cream cheese (chopped and softened)
  • ¼ cup grated parmesan cheese
  • Kosher salt and freshly ground black pepper (to taste)
  • Fresh parsley (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add onions and sauté until softened, about 4–5 minutes.
  2. Add the sausage, breaking it up with a spatula until no longer pink. Stir in minced garlic and cook for an additional minute.
  3. Pour in tomato puree, crushed tomatoes, chicken broth, and dried basil. Bring to a boil, then reduce heat to simmer for 10–15 minutes.
  4. Incorporate cream cheese and half of the parmesan cheese, stirring until melted for a creamy texture. Adjust thickness with more broth if needed.
  5. Season with salt and pepper to taste before serving hot, garnished with remaining parmesan and fresh parsley.
