  • 4 cups day-old cooked jasmine rice
  • 12 oz medium shrimp, peeled & deveined
  • 6 oz crab meat (fresh or imitation)
  • ½ cup diced carrots
  • ½ cup green peas
  • ½ cup diced red bell pepper
  • 2 large beaten eggs
  • Soy sauce, oyster sauce, and sesame oil for seasoning

Instructions

  1. Marinate shrimp and crab in soy sauce, sesame oil, lemon juice, garlic, ginger, and white pepper for 10-15 minutes.
  2. Prepare vegetables: dice carrots, bell peppers, onions; mince garlic and ginger.
  3. Heat wok over high heat; add vegetable oil until hot.
  4. Stir-fry marinated seafood for 2-3 minutes until shrimp turns pink; set aside.
  5. Sauté garlic, ginger, and onions until fragrant.
  6. Add carrots, peas, and bell peppers; stir-fry for 2-3 minutes.
  7. Push veggies aside; scramble eggs on the opposite side.
  8. Add day-old rice and mix well with vegetables and eggs.
  9. Pour in sauces; stir quickly to coat rice evenly.
  10. Return seafood to wok; toss everything together for another minute before serving.
