Ingredients
- 4 cups day-old cooked jasmine rice
- 12 oz medium shrimp, peeled & deveined
- 6 oz crab meat (fresh or imitation)
- ½ cup diced carrots
- ½ cup green peas
- ½ cup diced red bell pepper
- 2 large beaten eggs
- Soy sauce, oyster sauce, and sesame oil for seasoning
Instructions
- Marinate shrimp and crab in soy sauce, sesame oil, lemon juice, garlic, ginger, and white pepper for 10-15 minutes.
- Prepare vegetables: dice carrots, bell peppers, onions; mince garlic and ginger.
- Heat wok over high heat; add vegetable oil until hot.
- Stir-fry marinated seafood for 2-3 minutes until shrimp turns pink; set aside.
- Sauté garlic, ginger, and onions until fragrant.
- Add carrots, peas, and bell peppers; stir-fry for 2-3 minutes.
- Push veggies aside; scramble eggs on the opposite side.
- Add day-old rice and mix well with vegetables and eggs.
- Pour in sauces; stir quickly to coat rice evenly.
- Return seafood to wok; toss everything together for another minute before serving.
