- 4 large russet potatoes
- 1 pound ground beef or lamb
- 1 small onion, diced
- 2 carrots, diced
- 2 cloves garlic, minced
- 1 cup beef broth
- ½ cup milk
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Scrub and prick the potatoes with a fork. Rub with olive oil and salt; bake for 45–50 minutes until tender.
- In a skillet, brown the ground meat over medium heat. Add onions, carrots, and garlic; cook until softened.
- Stir in tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Add beef broth; simmer until thickened.
- Scoop out baked potato flesh and mash with milk, butter, garlic powder, salt, and pepper.
- Fill each potato with the meat mixture, top with mashed potatoes, and return to the oven for another 10–15 minutes until golden.
