  • 4 large russet potatoes
  • 1 pound ground beef or lamb
  • 1 small onion, diced
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • ½ cup milk
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Scrub and prick the potatoes with a fork. Rub with olive oil and salt; bake for 45–50 minutes until tender.
  3. In a skillet, brown the ground meat over medium heat. Add onions, carrots, and garlic; cook until softened.
  4. Stir in tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Add beef broth; simmer until thickened.
  5. Scoop out baked potato flesh and mash with milk, butter, garlic powder, salt, and pepper.
  6. Fill each potato with the meat mixture, top with mashed potatoes, and return to the oven for another 10–15 minutes until golden.
