- 1 cup orzo pasta
- 1 lb large shrimp, peeled and deveined
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 lemon, juiced and zested
- 1/4 teaspoon red pepper flakes
- 1/2 cup grated Parmesan cheese
- Fresh parsley for garnish
Instructions
- Cook orzo according to package instructions until al dente; drain and set aside.
- In a large skillet, heat olive oil over medium-high heat. Sauté minced garlic until fragrant (about 1 minute).
- Add shrimp to the skillet, season with salt and pepper, and cook until pink and opaque (about 2-3 minutes on each side). Remove shrimp from skillet.
- In the same skillet, combine chicken broth, lemon juice and zest, and red pepper flakes; bring to a simmer.
- Stir in cooked orzo and allow it to absorb flavors for about 2 minutes.
- Return shrimp to the skillet, sprinkle with Parmesan cheese, and stir until melted and well combined.
- Garnish with fresh parsley before serving.
