Ingredients
- 3/4 cup graham cracker crumbs
- 3 tablespoons unsalted butter, melted
- 8 ounces reduced-fat cream cheese, softened
- 3/4 cup plain 0% Greek yogurt
- 2 large egg whites
- 1/3 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon vanilla extract
- 1 teaspoon coconut extract
- 1/3 cup sliced almonds
- 1/3 cup shredded unsweetened coconut
Instructions
- Preheat your oven to 350°F. Line an 8×8 baking dish with foil.
- In a mixing bowl, combine graham cracker crumbs and melted butter. Press mixture into the bottom of the baking dish and bake for 8-9 minutes until golden.
- Beat softened cream cheese in a bowl until smooth; then mix in Greek yogurt, sugar, egg whites, and flour until well combined. Stir in vanilla and coconut extracts.
- Pour filling over crust and bake for an additional 25 minutes (20 minutes uncovered plus an extra 5 minutes covered with foil).
- Toast almonds and coconut in a pan over medium-low heat until golden brown.
- Once baked, cool for about 5 minutes before sprinkling toasted mixture on top. Chill in the fridge for at least 30 minutes before serving.
