  • 600g boneless skinless chicken thighs
  • 120ml honey
  • 80ml soy sauce
  • 4 cloves garlic, minced
  • 60ml ketchup
  • 2 tablespoons rice vinegar
  • 2 tablespoons cornstarch
  • 2 tablespoons water

Instructions

  1. In a small bowl, whisk together honey, soy sauce, garlic, ketchup, and rice vinegar until combined.
  2. Place chicken thighs in the slow cooker and pour the sauce over them.
  3. Cover and cook on low for 4-5 hours or high for 2.5-3 hours until chicken is tender.
  4. Remove chicken and mix cornstarch with water to create a slurry; add to the sauce in the slow cooker.
  5. Turn heat to high and cook for an additional 10-15 minutes until thickened.
  6. Shred the chicken with forks and return it to the sauce; stir well to coat.
