Ingredients

Scale
  • 1/2 cup whole milk
  • 1/2 cup water
  • 2 tsp dry active yeast
  • 410 grams (2 1/2 cups plus 3 Tbsp) bread flour
  • 1/3 cup packed brown sugar
  • 1 tsp salt
  • 1/2 tsp baking powder
  • 2 tbsp unsalted butter (melted)
  • 2 cups warm water (for baking solution)
  • 2 tbsp baking soda (for baking solution)
  • 6 tbsp melted unsalted butter (for topping)
  • coarse pretzel salt (for topping)

Instructions

  1. In a mixing bowl, combine warm water and whole milk. Sprinkle in yeast and let activate for about 5 minutes until frothy.
  2. Add melted butter, brown sugar, salt, and baking powder. Gradually mix in bread flour until a dough forms.
  3. Knead dough on a floured surface for about 5–7 minutes until smooth and elastic. Place in an oiled bowl, cover with a kitchen towel, and let rise until doubled in size (about 30 minutes).
  4. Preheat oven to 425°F (220°C). Divide dough into six equal pieces and roll each into a long rope (about 24 inches). Shape into knots.
  5. In another bowl, mix warm water with baking soda. Dip each pretzel for about 30 seconds then place on parchment-lined baking sheet.
  6. Sprinkle coarse salt over pretzels and bake for about 8 minutes or until golden brown. Brush with melted butter while warm.
