  • 1 tbsp olive oil or butter
  • 4 slices bacon, chopped
  • 1 small onion, diced
  • 34 jalapeños, seeded and finely chopped
  • 3 cloves garlic, minced
  • 1 lb cooked shredded chicken
  • 4 cups chicken broth
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • ½ cup heavy cream
  • smoked paprika, to taste
  • salt, to taste
  • pepper, to taste

Instructions

  1. In a large pot, cook bacon until crispy. Remove and set aside.
  2. Sauté onion and jalapeños in the bacon grease for 4–5 minutes; add garlic and cook for an additional 30 seconds.
  3. Stir in shredded chicken and chicken broth; bring to a gentle boil then simmer for 10 minutes.
  4. Reduce heat to low and mix in cream cheese until melted. Add cheddar, heavy cream, smoked paprika, salt, and pepper; stir until smooth.
  5. Simmer for another 5–10 minutes before serving with crispy bacon and desired toppings.
