Ingredients
- 1 tbsp olive oil or butter
- 4 slices bacon, chopped
- 1 small onion, diced
- 3–4 jalapeños, seeded and finely chopped
- 3 cloves garlic, minced
- 1 lb cooked shredded chicken
- 4 cups chicken broth
- 8 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- ½ cup heavy cream
- smoked paprika, to taste
- salt, to taste
- pepper, to taste
Instructions
- In a large pot, cook bacon until crispy. Remove and set aside.
- Sauté onion and jalapeños in the bacon grease for 4–5 minutes; add garlic and cook for an additional 30 seconds.
- Stir in shredded chicken and chicken broth; bring to a gentle boil then simmer for 10 minutes.
- Reduce heat to low and mix in cream cheese until melted. Add cheddar, heavy cream, smoked paprika, salt, and pepper; stir until smooth.
