Ingredients

  • 1.5 cups sushi rice
  • 2 cups water
  • 1 pound ahi tuna (sushi grade)
  • 3 tablespoons Japanese kewpie mayonnaise
  • 2 tablespoons Sriracha
  • 1 avocado (thinly sliced)
  • Sesame oil
  • Salt
  • Granulated sugar
  • Lime juice

Instructions

  1. Rinse sushi rice under cold water until clear. Combine with water in a saucepan and bring to boil. Reduce heat to low and cover; cook for 15 minutes. Let sit covered for another 10 minutes.
  2. In a small bowl, mix salt, rice vinegar, sugar, and sesame oil; fold into cooled rice.
  3. Shape the rice into rectangles using a sushi mat lined with plastic wrap and refrigerate for 30 minutes.
  4. Mix chopped ahi tuna with kewpie mayonnaise, Sriracha, soy sauce, sesame oil, and lime juice.
  5. Heat oil in a pan over medium-high heat and fry the rice rectangles until golden brown on both sides (about 2-3 minutes each).
  6. Top fried rice pieces with spicy tuna mixture and garnish with avocado slices.
