Ingredients
- 1 pound large mushrooms (Cremini or Portobello)
- 1 cup cooked chicken (finely diced or shredded)
- 5 ounces fresh spinach (roughly chopped)
- 4 ounces cream cheese (softened)
- 1/2 medium yellow onion (finely chopped)
- 3 cloves garlic (minced)
- 1/4 cup grated Parmesan cheese
- 1/4 cup shredded mozzarella cheese
- 1/4 cup breadcrumbs (Panko preferred)
Instructions
- Preheat oven to 375°F (190°C). Clean mushrooms with a damp paper towel and remove stems; finely chop the stems.
- In a skillet, heat olive oil over medium heat. Sauté onions for 3-4 minutes, add garlic and mushroom stems; cook until browned.
- Add spinach to the skillet and cook until wilted. Transfer to a mixing bowl; mix in cream cheese until smooth.
- Stir in chicken, Parmesan, mozzarella, and breadcrumbs. Season with salt, pepper, and nutmeg if desired.
- Stuff each mushroom cap with the filling mixture and place in a greased baking dish.
- Top with additional breadcrumbs and Parmesan before baking for 20-25 minutes until golden brown.
