  • 1 pound large mushrooms (Cremini or Portobello)
  • 1 cup cooked chicken (finely diced or shredded)
  • 5 ounces fresh spinach (roughly chopped)
  • 4 ounces cream cheese (softened)
  • 1/2 medium yellow onion (finely chopped)
  • 3 cloves garlic (minced)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup breadcrumbs (Panko preferred)

Instructions

  1. Preheat oven to 375°F (190°C). Clean mushrooms with a damp paper towel and remove stems; finely chop the stems.
  2. In a skillet, heat olive oil over medium heat. Sauté onions for 3-4 minutes, add garlic and mushroom stems; cook until browned.
  3. Add spinach to the skillet and cook until wilted. Transfer to a mixing bowl; mix in cream cheese until smooth.
  4. Stir in chicken, Parmesan, mozzarella, and breadcrumbs. Season with salt, pepper, and nutmeg if desired.
  5. Stuff each mushroom cap with the filling mixture and place in a greased baking dish.
  6. Top with additional breadcrumbs and Parmesan before baking for 20-25 minutes until golden brown.
