  • 8 oz feta cheese
  • 1216 oz frozen spinach (thawed)
  • 1 cup plain whole-milk Greek yogurt
  • 1/2 cup mayonnaise (preferably avocado oil mayo)
  • 2 garlic cloves (grated)
  • 1 cup sliced pepperoncini peppers
  • 1 1/2 cups grated mozzarella cheese

Instructions

  1. Preheat oven to 400ºF. Grease an 8×8-inch baking dish or cast iron skillet.
  2. In a mixing bowl, crumble the feta cheese with a fork.
  3. Squeeze excess water from the thawed spinach using a clean kitchen towel and add to the feta.
  4. Mix in Greek yogurt, mayonnaise, grated garlic, crushed red pepper flakes, chopped pepperoncini peppers, and 1 cup of mozzarella until well combined.
  5. Transfer mixture to the prepared dish and top with remaining mozzarella.
  6. Bake for 26-30 minutes until bubbly and golden. Broil for an extra two minutes if desired.
