- 12–16 oz frozen spinach (thawed)
- 1 cup plain whole-milk Greek yogurt
- 1/2 cup mayonnaise (preferably avocado oil mayo)
- 2 garlic cloves (grated)
- 1 cup sliced pepperoncini peppers
- 1 1/2 cups grated mozzarella cheese
Instructions
- Preheat oven to 400ºF. Grease an 8×8-inch baking dish or cast iron skillet.
- In a mixing bowl, crumble the feta cheese with a fork.
- Squeeze excess water from the thawed spinach using a clean kitchen towel and add to the feta.
- Mix in Greek yogurt, mayonnaise, grated garlic, crushed red pepper flakes, chopped pepperoncini peppers, and 1 cup of mozzarella until well combined.
- Transfer mixture to the prepared dish and top with remaining mozzarella.
