- 2 tablespoons unsalted butter
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 3 cups seafood stock
- 1 cup heavy cream
- 1/2 cup dry white wine
- 1 teaspoon Old Bay seasoning
- 1/2 pound shrimp, peeled and deveined
- 1/2 pound lump crab meat
- 1/2 pound scallops
- 4 large crusty bread rolls
Instructions
- Preheat oven to 375°F (190°C). Cut the tops off the bread rolls and hollow them out. Brush with olive oil and sprinkle garlic powder. Bake for 10–12 minutes until golden.
- In a large pot over medium heat, melt butter. Add onion and garlic; cook until softened. Stir in flour to make a roux.
- Gradually add seafood stock, cream, and white wine; simmer for about 5 minutes until thickened. Season with Old Bay, salt, and pepper.
- Add shrimp, crab meat, and scallops; cook until tender (4–5 minutes). Stir in parsley.
- Ladle soup into bread bowls and garnish with extra parsley.
