  • 2 tablespoons unsalted butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 3 cups seafood stock
  • 1 cup heavy cream
  • 1/2 cup dry white wine
  • 1 teaspoon Old Bay seasoning
  • 1/2 pound shrimp, peeled and deveined
  • 1/2 pound lump crab meat
  • 1/2 pound scallops
  • 4 large crusty bread rolls

Instructions

  1. Preheat oven to 375°F (190°C). Cut the tops off the bread rolls and hollow them out. Brush with olive oil and sprinkle garlic powder. Bake for 10–12 minutes until golden.
  2. In a large pot over medium heat, melt butter. Add onion and garlic; cook until softened. Stir in flour to make a roux.
  3. Gradually add seafood stock, cream, and white wine; simmer for about 5 minutes until thickened. Season with Old Bay, salt, and pepper.
  4. Add shrimp, crab meat, and scallops; cook until tender (4–5 minutes). Stir in parsley.
  5. Ladle soup into bread bowls and garnish with extra parsley.
