Ingredients
- 2 medium sweet potatoes
- 1 can (15 oz) black beans, rinsed and drained
- 1 ripe avocado, diced
- 1 cup corn (fresh, frozen, or canned)
- ½ cup cherry tomatoes, halved
- ¼ cup red onion, finely chopped
- ¼ cup fresh cilantro, chopped
- Salt and pepper to taste
- ½ cup Greek yogurt
- 1 tablespoon lime juice
- ¼ cup fresh cilantro
Instructions
- Preheat the oven to 400°F (200°C).
- Pierce sweet potatoes with a fork and place them on a parchment-lined baking sheet.
- Bake for 45–60 minutes until tender.
- Once cool, slice each potato in half lengthwise and scoop out some flesh to create space for the filling.
- In a mixing bowl, combine black beans, avocado, corn, cherry tomatoes, red onion, cilantro; season with salt and pepper.
- In a small bowl, whisk together Greek yogurt, lime juice, cilantro, and salt until smooth.
- Fill each sweet potato half with the mixture and drizzle with the crema.
