  • 2.5 lb pork loin roast
  • 1.5 lbs sauerkraut
  • 1/4 cup brown sugar
  • 1.5 cups apple slices
  • 1 bag wide egg noodles
  • 2 tbsp unsalted butter
  • 1.5 tbsp high-heat oil (vegetable or avocado oil)
  • Salt to taste
  • Black pepper to taste (freshly ground preferred)
  • 2.5 tbsp chicken soup base
  • 2 garlic cloves (finely minced)
  • 1 cup water
  • 1/2 yellow onion (diced into 1/2-inch pieces)
  • Fresh parsley (chopped, about 2 tbsp)

Instructions

  1. Heat oil in a large pot over medium-high heat. Season the pork with salt and black pepper, then sear each side for about 4-5 minutes until browned. Remove and set aside.
  2. In the same pot, sauté diced onion and minced garlic until softened, about 3 minutes. Stir in rinsed sauerkraut, chicken soup base, brown sugar, apple slices, water, salt, and pepper.
  3. Return the seared pork to the pot, bring to a simmer, cover with a lid, and reduce heat to low.
  4. Cook gently for about 90 minutes until the pork is tender; stir occasionally.
  5. While the pork cooks, boil water in another pot to cook egg noodles; drain when ready.
  6. Once the pork is tender, remove it from the pot to rest before slicing. Serve over cooked noodles and top with fresh parsley.
