Ingredients
- 1 tablespoon sesame oil
- ¼ cup onion, diced
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 10 oz ground chicken
- ¼ cup Tamari (or soy sauce)
- 2 tablespoons Thai sweet red chili sauce
- Juice of 1 lime
- â…“ cup cashews, chopped
- Butter lettuce leaves
Instructions
- Heat sesame oil in a non-stick pan over medium-high heat. Sauté onion until translucent, then add garlic and ginger for another 2 minutes.
- Add ground chicken to the pan, breaking it apart while cooking. Season lightly with salt and pepper until fully cooked.
- In a bowl, mix Tamari, Thai chili sauce, lime juice, and maple syrup. Pour this over the chicken along with chopped cashews and stir well.
- Cook for another 2 minutes on low heat before removing from heat and mixing in shredded carrots, scallions, and cilantro.
- To assemble, place a generous spoonful of the chicken mixture into each butter lettuce leaf and drizzle with extra sauce if desired.
