  • 1 small onion (finely grated)
  • 1/4 cup arborio rice (uncooked)
  • 2 tablespoons fresh parsley (chopped)
  • 1 tablespoon fresh dill (chopped)
  • 1 egg
  • Salt and black pepper to taste
  • 1/2 teaspoon dried oregano
  • 4 cups chicken broth
  • 2 tablespoons olive oil
  • 2 eggs
  • Juice of 2 lemons

Instructions

  1. In a mixing bowl, combine ground beef, grated onion, rice, parsley, dill, egg, oregano, and seasonings. Mix gently until blended.
  2. Shape the mixture into golf ball-sized meatballs and chill for 15–20 minutes.
  3. In a large pot, bring chicken broth and olive oil to a simmer over medium heat. Carefully add the meatballs.
  4. Cover and cook on low heat for about 30 minutes.
  5. To make the lemon sauce, whisk eggs and lemon juice in a bowl. Gradually mix in hot broth from the pot while whisking continuously. Return this mixture to the pot and stir gently until slightly thickened.
  6. Serve warm with extra herbs or lemon wedges as desired.
