  • 1/2 teaspoon pepper
  • 1 teaspoon smoked paprika
  • 2 cups yellow onion (finely diced, about 1 large onion)
  • 1 tablespoon finely minced garlic (about 4 cloves)
  • 2 tablespoons flour
  • 5 cups chicken broth
  • 4 cups baby gold potatoes (diced, unpeeled)
  • 1 (15.5-ounce) can navy beans
  • 1/2 cup sun-dried tomatoes (finely diced, plus more for garnish)
  • 2 cups half-and-half
  • Basil pesto

Instructions

  1. In a large pot over medium-high heat, add olive oil and brown the sausage with salt, pepper, and smoked paprika. Remove the sausage and set aside.
  2. Sauté diced onion and minced garlic in the same pot until soft. Stir in flour and cook for 1 minute before gradually adding chicken broth.
  3. Bring to a boil, then add diced potatoes. Cover and simmer for about 15 minutes until potatoes are tender.
  4. Stir in navy beans and sun-dried tomatoes; simmer uncovered for another 5 minutes before mixing in half-and-half.
  5. Return the sausage to the pot, stir well, and serve hot with a swirl of pesto on top.
