- 24 oz cream cheese (softened)
- 3/4 cup heavy whipping cream
- 6 oz raspberries
- 3/4 cup white granulated sugar
- 2 eggs
- 1 tsp vanilla extract
Instructions
- Preheat oven to 325°F (160°C).
- Combine graham cracker crumbs, dark brown sugar, melted butter, and vanilla in a bowl; press into a springform pan.
- Melt white chocolate and pour over the crust; let it set.
- In a mixing bowl, beat the softened cream cheese until smooth. Add heavy cream, yogurt, eggs, vanilla extract, corn starch, and sugar; mix until creamy.
- Pour the filling over the crust.
- For the raspberry swirl: Cook raspberries with sugar and lemon juice until softened; thicken with cornstarch mixture.
- Dollop raspberry mixture on top of cheesecake filling and gently swirl.
- Bake for about 85 minutes or until set but jiggly in the center.
