- 1 cup water
- 1/2 cup cornstarch (for dusting)
Instructions
- Boil water in a medium pot. Cut a small cross at the bottom of each peach and boil for one minute. Transfer to cold water, peel, and halve.
- In a microwave-safe bowl, combine glutinous rice flour and sugar. Whisk in water until smooth. Cover with a wet paper towel and microwave for 1 minute; stir and repeat two more times until thick.
- Dust a surface with cornstarch, roll out mochi dough into circles about 1/6-inch thick, and cut into four portions.
- Place half a peach in each portion, fold the dough around it, ensuring it’s completely enclosed. Dust off excess cornstarch.
