  • 2 1/2 cups sugar (divided)
  • 1 1/2 cups applesauce
  • 6 oz package of JELL-O (any flavor)
  • 2 envelopes unflavored gelatin (0.25 oz each)
  • 1 tsp lemon juice

Instructions

  1. Prepare a 9×13 baking dish by coating it with non-stick cooking spray and chill it in the refrigerator.
  2. In a large saucepan, combine 2 cups of sugar, applesauce, JELL-O, unflavored gelatin, and lemon juice. Let stand for 1 minute.
  3. Bring the mixture to a boil over medium heat while stirring constantly for about 1 minute.
  4. Pour the mixture into the chilled baking dish and refrigerate for about three hours until firm.
  5. Once set, gently loosen the edges with a spatula, invert onto waxed paper sprinkled with sugar, and cut out desired shapes using cookie cutters.
  6. Place gumdrops on more sugared waxed paper to dry for at least 8 hours before rolling them in remaining sugar.
